Crafted in Utah: Stories of quality, expertise, and dedication.
Last summer, we began delivering farm boxes to areas around Salt Lake City. Along with bringing fresh, organic produce and natural groceries to our newest members, we've also partnered with some amazing local producers and artisans. We're thrilled to introduce you to a few of them in our new blog series, "Crafted in Utah: Stories of quality, expertise, and dedication."
Beehive Cheese
Renowned for their innovative approach to artisanal cheddar, Beehive Cheese began in 2005 with a commitment to high-quality, locally sourced ingredients. Best friends and brothers-in-law Tim Welsh and Pat Ford had minimal cheesemaking experience, but were determined to contribute to the local Utah foodie community.
Tim and Pat quit their corporate jobs to delve into the making of something almost everyone loves. First, they mastered the craft of making cheese and then began to add the innovative twists and flavors to distinguish themselves on the market. Little did they know that the creation of Barely Buzzed would take them to the top, winning multiple awards and driving a significant shift in the cheese industry towards flavored and rubbed-rind varieties.
Beehive Cheese partners with a third-generation family creamery to source high quality local Jersey cow's milk. They use only raw materials and age their cheese until they are perfect -- ranging between 3-6 months depending on the season and composition of the milk. Their cheeses are vegetarian-friendly since they use microbial rennet in production.
They craft artisan cheddar of all kinds of varieties. Their signature Barely Buzzed has won over 35 awards and has become a beloved product, known for its unique flavor profile and craftsmanship. Rubbed with espresso and lavender, it is any party’s essential. Barely Buzzed is easy to pair, stunning to look at, and always draws the eye on the cheese board.
In 2023, Beehive Cheese became one of seven American cheesemakers to be awarded a B Corp Certification, which underscores its commitment to ethical practices and community respect. After nearly 20 years in business Tim and Pat passed the company into the hands of their sons who cultivate a positive work environment, offer fair wages, and support local causes. As one TV anchor from Utah’s Channel 5 put it, Beehive Cheese is “the David standing up to the Goliath of the industry.”
