Crunchy, sweet, salty and tangy, this salad is easy to make and perfect for summer. This recipe is vegetarian but can easily be made vegan if you use vegan Feta.
(Serves 8)
Ingredients:
1 seedless watermelon (8 cups), diced into small cubes
2 cups blueberries
¼ cup mint or basil leaves, coarsely chopped
¾ cup feta cheese, crumbled
¼ cup olive oil
3 tablespoons balsamic vinegar
½ teaspoon sea salt
¼ teaspoon ground black pepper
¼ cup red onion, finely minced
Instructions

In a large bowl, combine the watermelon, blueberries, mint or basil and half of the feta.
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, pepper and red onion.
Pour the dressing over the top of the watermelon mixture and gently toss to coat.
Transfer the salad to a serving dish, sprinkle the rest of the feta over the top and serve immediately.
