We love to have fun with seasonal holiday foods and among our favorites are the beautiful and always delicious cookies from Little Rae’s Bakery in Seattle, WA.
An independent craft bakery since 1996, Little Rae’s specializes in hand made, all-natural shortbread cookies with unique festive designs. We caught up with co-owner and CEO Sam Greene to find out more about their company and its popular creations.Little Rae’s had a gradual entry into the local baked goods scene as friends James, Tony and Sam started baking after hours in a restaurant kitchen to supply area coffee shops. They would work all night and make a little bit of everything,-- muffins, croissants, scones, so that in the early morning someone could load up the fresh goodies and deliver them around town. In time, Little Rae’s became quite a distributor of baked goods throughout the city.
Asked how they decided to specialize in shortbread cookies, Sam explained that after spending many many hours piping frosting on top of cookies, he looked for another way to decorate them. He liked to draw and started playing around with different decorating techniques as a sort of an art project. He would freehand the cookie designs and then keep working on them to make them consistent.
Next, he would ask what sort of tools they would need to make the patterns reproducible and as they brought on more equipment, they made more shortbread cookies. In this way, they scaled the unique production process of decorating their cookies, applying plant based colors derived from beets, carrots, turmeric, cabbage and spinach directly to the top of each cookie.
Underneath the creative designs is a treat that the makers
are proud to say contains all natural, real food. Using butter from area
creameries, regeneratively farmed wheat flour from Shepherd’s Grain, cage-free
eggs, cane sugar and Madagascar vanilla, Little Rae’s believes in simple,
recognizable ingredients from farms and suppliers who focus on sustainable
production and clean food products.
The end result is a treat that you can feel as good about eating as they do making them, and that also comes from a peanut-free and nut free facility so more people can enjoy them. Sam describes the atmosphere of their bakery as focused, yet chill. It is a clean, friendly environment, with music playing and a good vibe.
Grateful for their dedicated staff, some of whom have been with the business for 15 years, Little Rae’s has weathered everything from growing pains to a pandemic. They remain the best kind of small business in the food industry,-- one that cares about the people, the community and the food we share with family and friends.
