Nona Lim's Nourishing Recipes

Whether you’re craving something savory and spicy, creamy and tangy, or warm and soothing, Nona Lim has you covered. We are excited to share some of her delicious recipes that use the perfect combination of produce from your farm box and products from Nona Lim.

Dan Dan Noodles

(Serves 2)
Ingredients:
Sauce
1/4 cup peanut butter
3 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons honey
1/2 tablespoon minced garlic

Noodles & Toppings

10 oz Nona Lim Traditional Ramen Noodles (1 box)
Sautéed spinach
Chopped green onion
Chopped peanuts
Chili crisp

Directions:
In a medium bowl, stir together the sauce ingredients until well combined.

Cook ramen noodles according to package directions. Drain noodles.

Transfer drained noodles to the medium bowl and mix with the sauce and a small amount of chopped green onion.

Top noodles with chili crisp, sautéed spinach, chopped peanuts, cilantro, and chopped green onion.

Nona's Chicken Teriyaki Ramen

(Serves 2)
Ingredients:
13 oz Nona Lim Teriyaki Ramen Stir Fry Kit (1 box)
6 oz chicken, thinly sliced
1/2 cup green cabbage, shredded
1/4 cup mushrooms, sliced
1/4 cup onion, thinly sliced
2 tablespoons vegetable oil

Optional Garnish: chopped green onions, sesame seeds

*Equipment: A large nonstick skillet, wok or cast iron skillet required for this recipe

Instructions:
Cut a small vent in noodle pouches and microwave until they are warm (30 to 60 sec). Leave noodles in pouch.

Heat 1 tablespoon of oil in a skillet over medium heat. Add chicken and stir-fry 3 to 4 min until cooked. Set chicken aside.

Add remaining oil. Add onion and stir-fry for 2-3 min. Add mushrooms and cabbage and stir-fry for another 2-3 min till tender.

Add chicken back into the skillet. Add noodles and Bachan’s Teriyaki sauce. Toss everything for 1 min.

Top with optional garnish. Serve and enjoy.

Nona’s Chicken Pad Thai

(Serves 2)
Ingredients:
13 oz Nona Lim Pad Thai Stir Fry Kit (1 box)
6 oz chicken (white or dark meat), thinly sliced, seasoned with salt and pepper
4 oz bean sprouts
2 tablespoons vegetable oil
1 clove garlic, minced

Optional garnish: Chopped green onions, crushed roasted peanuts, lime wedges

*Equipment: A large nonstick skillet, wok or cast iron skillet required for this recipe

Instructions:
Cut a small vent in noodle pouches and microwave until they are warm (30-60 seconds). Leave noodles in pouch.

For chicken, heat 2 tablespoons of oil in a skillet or wok over medium heat. Add garlic and stir-fry for 30 seconds. Add chicken and stir-fry 3 to 5 minutes until cooked.

To prepare vegetables, add bean sprouts and stir-fry for 1 minute.

Add noodles and sauce to skillet or wok and toss everything for 1 minute, being careful to handle the noodles gently. If possible, toss ingredients using a wrist-flick motion to minimize handling the noodles with a utensil.

Once noodles and sauce are well incorporated, plate your Pad Thai, garnish with green onions, peanuts, and lime wedges. Enjoy!

Pro tip: when stir frying your Pad Thai noodles, be sure that the noodles are not cold before they hit the pan. Nona recommends microwaving the noodles in their packaging first, so that they separate and cook easily without breaking. Rice noodles should be handled gently even though stir frying traditionally requires fast cooking and high heat. If you're able to toss your ingredients without the use of utensils, go for it!
