Recipe Roundup: Green Garlic


Green garlic is simply immature garlic and looks like a slightly overgrown scallion or green onion. To use, trim off root ends and any tough part of the green leaves. Chop or slice white, light green, and the first few inches of the dark green leaves (as long as they are tender).

Use as you would green onions or garlic. Add raw green garlic to salads, dressings, and sauces. Try it braised, grilled, or pickled. Add it to a frittata, a soup, or pair it with other spring treats like asparagus. Put green garlic in pasta or in your favorite rice bowl Green garlic should be stored in the refrigerator, where it will keep for 5-7 days.

Green garlic is delicious braised, grilled or pickled. It has a flavor more delicate than mature garlic that won't overpower other flavors. Slice it as you would a scallion, and add it to a frittata, soup, pair it with other spring treats like asparagus, or choose from one of our delicious recipes.
