Green garlic is simply immature garlic and looks like a slightly overgrown scallion or green onion. To use, trim off root ends and any tough part of the green leaves. Chop or slice white, light green, and the first few inches of the dark green leaves (as long as they are tender).
Green garlic is delicious braised, grilled or pickled. It has a flavor more delicate than mature garlic that won't overpower other flavors. Slice it as you would a scallion, and add it to a frittata, soup, pair it with other spring treats like asparagus, or choose from one of our delicious recipes.
Green Garlic Stuffed Mushrooms
This recipe is quick, easy, delicious and a great way to share the flavors of spring. Enjoy as an appetizer or a side dish.
Spring Ramen with Snap Peas and Asparagus
Filled to the brim with delicious spring vegetables, this ramen is healthy and filling. We think you'll love the combination of textures and flavors in this recipe.
Green Garlic, Spring Onion and Asparagus Egg Clouds
This fun new culinary trend is really taking off, so we were excited to try it out ourselves and add some delicious spring veggies to the plate. The yolk is nestled in a little cloud of whipped egg white. It's a fun new recipe to serve for breakfast, brunch, lunch or dinner.
Creamy Green Garlic and Potato Soup
This soup is thick and creamy with a delicious garlic flavor. Feel free to add some mushrooms or even sour cream to make this like a baked potato soup.
Green Garlic and Goat Cheese Muffins
Green garlic is milder than regular garlic cloves, giving these muffins just enough flavor without any bite. The goat cheese pairs perfectly in these savory muffins. We love the texture difference between the top part of the muffin and the bottom - it's almost like a biscuit muffin!
Spring Onion, Green Garlic and Spinach Quiche
This creamy quiche is a fantastic way to highlight the tender, early greens and sweet alliums appearing in these early spring days. The salty white cheddar cheese really brings all of these flavors together.
Green Garlic Flan
The window is brief during which green garlic—that is, immature garlic—is available each spring at the market, and Jim Eldon of Fiddler’s Green Farm always has a nice supply. The cloves and heads have not yet formed, which means the garlic is mellow and mild and its texture is crisp. This delicate savory custard has a silky texture and the merest hint of garlic flavor. The individual custards make a special side dish for a beer or pork roast, or you can combine them with a small green salad for an unusual first course. —Ann M.
