Cover beans by at least 3 inches of cold water and soak 4-6 hours or overnight. Drain the beans and refrigerate if not using immediately.<br /><br /></div><div>When you are ready to cook them, place soaked beans in a large pot and fill with cold water. Bring to a boil, skim and discard any foam that rises to the surface and lower to a simmer and cook for 1-2 hours, depending on the size of the bean and desired tenderness. Add more water, if needed, to keep beans covered. Gentle simmering keeps the texture of the beans creamy and ensures that their skins don’t break. He liked to draw and started playing around with different decorating techniques as a sort of an art project. Kaldi tried the fruit for himself and had a similar reaction. Jim and Deborah Durst have been growing organic crops since 1988, continuing the Durst family farming legacy that began in northern California in the late 1800s.<span></span></p><a name='more'></a><p> Their mission is to grow fresh organic produce, and educate their community about sustainable farming that provides quality of life for the farmer and economic viability for the farm while always maintaining care and respect for nature’s diversity.</p><p>Over time, the Durst family transitioned from large-scale commodity crop farming such as processing tomatoes, to other crops like organic alfalfa, sunflowers, sugar beets, and grain. By 1989 they were growing their first organic fresh market tomatoes and mixed melons, and since then, they have continued to raise a mix of organic fresh market and commodity crops. Along the way, they added a few other specialties, including asparagus, which they first planted in 1997. <br /></p><p></p><div class="separator" style="clear: both; text-align: center;"><a data-flickr-embed="false" href="https://www.flickr.com/photos/farmfreshtoyou/52961225885/in/dateposted/" style="margin-left: 1em; margin-right: 1em;" title="About asparagus"><img alt="About asparagus" height="427" src="https://live.staticflickr.com/65535/52961225885_a4c02f5540_z.jpg" width="640" /></a></div><p>Asparagus is a spring and early summer crop. The asparagus plant roots store energy and nutrients throughout the winter until spring, when they send up their spears. On the Durst farm, the spears are harvested by hand, using specialized tools, and then are bunched and packed by hand as well. This year, thanks to all the rain, their asparagus harvest was about a month behind schedule, beginning in late March and continuing into June. </p><p>Their asparagus fields are irrigated with buried drip, saving a great deal of water over using sprinklers. It takes 3 years after planting to establish the asparagus plants before harvesting can begin; thereafter, the same field can grow back several years in a row before needing to be replanted. That glimmer on the end of the serpent was what I suspected, a rattle,-- each nub the result of one skin shed. It was a beautiful and huge rattlesnake, the back half still in the gravel road, the front starting to make its way up a bank on the side of the road.<span></span></p><a name='more'></a>Noticing me, and wanting to be where it came from, not where it was headed, the snake turned and crossed the road, showing off its size, grace and speed. I moved to try to get in front of it in order to take a picture of that impressive rattle. It poked its head into a hole at the side of the road which for some reason horrified me. The thought of three full feet of rattlesnake disappearing into the ground was too much. If I were a ground squirrel, I would never find comfort in my tunnel again.<br /><br />The handsome creature pulled its head back out and slithered slowly into the shade and terrain of a black walnut tree. Its body, tattooed with a brown and tan pattern, slowly disappeared until the snake thought it was safe. All that remained visible was the last six inches, including the splendid rattle which hung over a root in the ground, perfectly still. <script async="" src="//www.instagram.com/embed.js"></script><p>So many thoughts. It didn’t make a sound; not surprising that a snake that old didn’t rattle at all. Some folks have an unreasonable fear of snakes, and many rural folks would have killed it. For generations, people have been killing rattlesnakes. The rattle, meant to be a warning system screaming “I am here, go somewhere else!,” turned into a location system, “I am here, come kill me!” In my humble opinion, we have been breeding these creatures to be silent. If they rattle, they die; if they stay quiet, they live. This one was old and no doubt at some point its life was extended by not rattling.</p><p><br />As I stood there, I had no desire to kill the snake, but I had a fleeting urge to mess with it. What would happen if I grabbed the rattle? It seemed impossible that the snake would be able to whirl around and bite me, but the thought of it made my arm tingle. What a dumb idea. <i>We re-print this column, originally told in 2010, in our newsletter most years because it proves the old adages “everything in moderation” and “your mother is always right.” We figured it was time we finally shared Farmer Thaddeus' story on our blog. <span></span></i></p><a name='more'></a><p></p><p>While I was growing up on the farm (that's me, my parents and my brothers on the farm in the photo above), I was extremely excited about Halloween. An unwritten rule in our family was that processed sugar of any type was not permitted. I was envious of my friends who grew up with Pepsi and Doritos in their daily lunches. Today, I am grateful that my parents instilled in me the habits of eating food that my body was good at processing. Back then, Halloween was the one chance every year my brothers and I had to load up with high fructose corn syrup and chocolate. </p><p>My brothers and I took the annual opportunity to acquire candy very seriously, and the choice of which community we would go hunt for it was left up to us. After years of attempts at obtaining the highest volume of candy possible per evening of trick-or-treating, it finally dawned on us that technique, not location, was the answer.
It was at this point that roller blades were added to every costume. I wish that I could claim credit for the paradigm shift in our approach, but my younger brother Freeman and our close friend Danny, now a manager with Farm Fresh To You, earn the credit for recognizing the potential that resulted when Halloween, trick-or-treating and roller blades were mixed together. </p><p>When Freeman and Danny began dressing up with roller blades for Halloween, I was too old to reap the benefits with them, but I was not too old to be jealous of their success. In an evening of trick-or-treating on roller blades, they were able to hit two to three times as many houses during the “candy hours” as people looking for treats on foot. At the end of their first Halloween with roller blades, Freeman and Danny had racked up a solid pillowcase each of candy. This accomplishment on our organic farm was equivalent to the success of a pirate finding the mark on a valid treasure map. </p><p>It would take less than a month before the loot was consumed, and we were back to the snack routine of bread, cheese and whatever food we could scrounge from the farm. Our beloved mother would answer our cries of: “There is nothing to eat on this farm!” with “The cold room is packed with fresh fruits and vegetables.” As a child, that fact was torturous. Today, my brothers and I look back and realize that these painful lessons from childhood resulted in invaluable adult eating habits that serve us well.</p><p>We hope you enjoy your farm boxes each week and realize that an annual binge of sugar is fun, but that eating healthy as a child is one of the few gifts that keeps on giving.</p>Farm Fresh To Youhttp://www.blogger.com/profile/09695282104929722563noreply@blogger.com0
